Easy Shepherd's Pie
Description
Easy Shepherd's Pie features a rich mix of ground beef cooked with diced onions, frozen peas, carrots, and corn, bound together with tomato paste and flour to create a thickened filling. Flavorful dried herbs like rosemary and thyme deepen the dish’s profile, complemented by garlic and Worcestershire sauce. The mashed potatoes, made from boiled russet potatoes blended with butter, milk, salt, and pepper, are spread hot over the beef mixture, helping them to spread evenly and form a comforting layer.
After assembling, the pie is baked until the filling bubbles and the potatoes develop a gentle crust, resulting in a savory and warming meal. This dish makes a substantial main course and pairs well with simple green sides or a crisp salad for contrast.
Leftover shepherd's pie stores well in the refrigerator for up to 4-5 days. For best results when spreading, ensure the mashed potatoes are hot so they cover evenly over the meat filling. Reheat leftovers thoroughly before serving.
