Description
The recipe starts by sautéing diced onion, carrot, and celery in olive oil until softened. Ground lamb is then browned and combined with boiling water, beef stock, gravy granules, Worcestershire sauce, tomato puree, salt, and pepper. This mixture simmers briefly until thickened, creating a rich meat base.
Meanwhile, potatoes are peeled, diced, boiled until tender, then mashed with butter and mature cheddar cheese for a creamy, flavorful topping. The meat filling is transferred to an ovenproof dish and topped with the mashed potatoes, which are textured with a fork to encourage crisping.
Baked at 190°C (375°F) for 20 minutes, the mashed potato forms a golden crust over the savory lamb. Variations include adding red wine for depth, swapping lamb for mushrooms and lentils for a vegan alternative, or using sweet potato mash for topping. Mint sauce pairs well with the lamb and can be stirred into the gravy for added flavor.
Allowing the meat mixture to cool slightly before topping helps it thicken and makes spreading easier. Creamier mashed potatoes facilitate a smooth topping layer.
Ingredients
- 1 tablespoon olive oil
- 1 onion diced
- 2 carrot finely diced
- 2 rib celery diced
- 500 g lamb mince
- 1 beef stock pot
- 250 ml water boiling
- 4 tablespoon gravy granules
- 2 tablespoon Worcestershire sauce
- 1 pinch sea salt
- 1 pinch black pepper
- 2 tablespoon tomato puree
- 4 potato peeled and diced
- 10 g butter
- 40 g cheddar cheese grated, mature
Instructions
- Preheat your oven to 190°C/170°C(fan)/375°F/Gas 5.
- Heat 1 tablespoon Olive oil in a large heavy pan. Add 1 Onion, 2 rib Celery and 2 Carrots. Cook on a low heat for 6-7 minutes until softened.
- Add 500 g Lamb mince and use a wooden spoon to separate the meat and mix well. On a gentle heat, brown the mince for 4-5 minutes.
- Add 250 ml Boiling water, 1 Beef stock pot, 4 tablespoon Gravy granules, 2 tablespoon Tomato puree, 2 tablespoon Worcestershire sauce and 1 pinch Sea salt and ground black pepper and stir well. Cook on a low heat for 5 minutes, until thickened.
- Meanwhile, make the mashed potatoes by peeling and chopping 4 Potatoes and adding to a pan of boiling water. Simmer for 15 minutes, drain and mash with the 10 g Butter and 40 g Mature cheddar.
- Add the lamb mixture to a large oven proof dish and top with the mashed potatoes. Use a fork to run around the mashed potatoes, as this will help to make it nice and crispy on top.
- Put it into the oven for 20 minutes.
Notes
- Adding a splash of red wine to the meat sauce enriches the flavor.
- For a vegan version, replace lamb mince with mushrooms and lentils and use vegan mashed potatoes.
- Sweet potato mash can be used as an alternative topping for variation.
- Incorporate a spoonful of mint sauce into the gravy to complement the lamb flavor.
- Cool the meat mixture before adding the potatoes to make spreading easier and allow the filling to thicken.
- The creamier the mashed potatoes, the smoother and easier they are to spread over the filling.
