Easy Shrimp Alfredo
Description
Easy Shrimp Alfredo features peeled shrimp cooked in a creamy sauce that includes softened cream cheese, heavy cream, butter, garlic, chicken broth, and Parmesan cheese. The sauce is prepared by melting butter and cream cheese together, then incorporating cream and broth to form a smooth base, which is simmered briefly to reduce and thicken. Fresh garlic adds aromatics, and Parmesan cheese enriches the sauce with savory depth. The shrimp is added near the end and cooked until just opaque, maintaining tenderness.
The accompanying fettuccine is cooked al dente to provide a firm bite that holds the creamy sauce well. Once combined, the dish can be seasoned with salt and pepper to taste. The final texture is creamy and slightly thick, with a balanced garlic and cheese flavor supporting the natural sweetness of the shrimp.
This dish serves as a standalone main course suitable for dinner and can be paired with a simple green salad or steamed vegetables for a complete meal. Prompt serving after preparation ensures the shrimp remain tender and the sauce smooth.
Ingredients
- 1 pound Shrimp thawed & peeled, tails optional, uncooked, 31-40 per pound size
- 8 ounces fettuccine uncooked
- 2 tablespoons butter
- 4 ounces cream cheese softened & cut into smaller pieces, used 1/2 block Philly brand
- 3/4 cup heavy cream aka whipping cream
- 1/4 cup chicken broth
- 2 large garlic minced, cloves
- 1 cup Parmesan Cheese freshly grated
- salt to taste
- black pepper to taste
Instructions
- Prep your shrimp (if frozen, add them to a colander and run under cool water until thawed).
- Start boiling a salted pot of water for the fettuccine. Cook it al dente according to package directions.
- Meanwhile, add the butter, cream cheese, cream, chicken broth, and garlic to a skillet over medium heat. Once the butter has melted and the pan has heated up, you can use your spoon to help the cream cheese melt into the sauce. This will take a couple of minutes.
- When the cream cheese has been incorporated into the sauce, let it gently bubble for 5 minutes until the sauce has reduced somewhat. You can give it the occasional stir. I grate the parmesan cheese while it's cooking.
- Stir the parmesan into the sauce. Let it cook for about a minute.
- Add the shrimp to the pan. Cook for 5-6 minutes, stirring occasionally.
- Season with salt & pepper as needed. Toss with the drained pasta and serve immediately.
Notes
- If cream cheese is still cold, soften it in short microwave intervals to aid melting.
- Add reserved pasta water to thin the sauce if it becomes too thick.
- The recipe appears in the Salt & Lavender: Everyday Essentials cookbook, page 49.
