Easy Shrimp Scampi
Description
This Easy Shrimp Scampi begins with melting butter and olive oil together and infusing them with minced garlic, red pepper flakes, scallions, lemon zest, kosher salt, and black pepper. Dry white wine is added and simmered to concentrate the flavor. Raw, deveined shrimp are then tossed in the sauce, arranged in a single layer in a broiler-safe skillet, and broiled briefly to cook through and develop a pink, opaque appearance without overcooking.
The final step includes stirring in fresh lemon juice and chopped Italian parsley, which brighten the rich, buttery sauce and add herbal freshness. The contrast between the buttery sauce and lively lemon and garlic notes creates a classic scampi profile. The quick broiling method ensures the shrimp remain tender and juicy.
Serve this shrimp scampi over pasta or rice, or with crusty bread to soak up the flavorful sauce. The dish can be adjusted to accommodate different shrimp sizes with shorter or longer broiling times as needed.
Ingredients
- 6 tablespoons butter unsalted
- 1/4 cup olive oil
- 4 large cloves garlic , minced
- 1/8 to 1/4 teaspoon red pepper flakes (optional, to taste)
- 1/4 cup scallions , thinly sliced
- 1 tablespoon lemon zest, grated
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper freshly-ground
- 1/4 cup white wine dry
- 1-1/2 pounds Shrimp deveined, shelled, tail on, raw U15 sized
- 1 tablespoon lemon juice fresh
- 1/4 cup parsley chopped, Italian variety, leaves
Instructions
- Preheat broiler with rack 6-inches from the element.
- In a large, broiler-safe skillet over medium-high heat, melt together butter and olive oil until foaming subsides. Add garlic and red pepper flakes (if using) and stir until fragrant, about 1 minute. Stir in scallions, lemon zest, salt, and pepper. Add wine, reduce heat slightly, and simmer for 2-3 minutes.
- Remove from heat and add shrimp, tossing to coat them with the butter mixture. Arrange shrimp in a single layer. Place pan in oven and broil shrimp for 3-4 minutes per side, until they are pink and opaque. Do not overcook.
- Stir in lemon juice and parsley. Serve over pasta, rice, or with crusty bread to dip into the butter sauce.
Notes
- If U15 shrimp are unavailable, extra jumbo or jumbo shrimp may be used but watch cooking time carefully.
- Check shrimp doneness after 2-3 minutes per side to avoid overcooking smaller shrimp varieties.
