Easy & Simple Earl Grey Chia Pudding

This Earl Grey Chia Pudding combines black chia seeds with Earl Grey tea-infused milk to create a subtly fragrant and textured breakfast or snack. The tea's citrusy and bergamot notes gently flavor the creamy chia mixture, which thickens overnight into a soft pudding with a light crunch from the seeds. Sweetened lightly with maple syrup and enhanced by vanilla extract, it offers a balanced flavor profile that works well topped with fresh fruit or coconut flakes.

Description

Easy & Simple Earl Grey Chia Pudding is made by gently infusing milk with Earl Grey tea, then combining it with chia seeds, maple syrup, and vanilla extract. Once the milk tea mixture cools, chia seeds absorb the liquid and expand, creating a creamy yet textured pudding. The infusion imparts distinctive citrusy bergamot notes from the tea, providing a delicate aroma and flavor without overpowering the mild sweetness from the syrup. The gelatinous chia seeds give a pleasant crunch contrasting the silky base.

After chilling for several hours or overnight, the pudding firms to a spoonable consistency. The pudding can be served with various toppings such as berries or coconut flakes to add freshness and complementary texture notes. It is suitable for a nourishing breakfast, light dessert, or snack.

Ingredients

Servings
  • 1 ½ cup milk or plain oat milk or soy milk for a dairy-free option
  • 1 bag earl grey tea or substitute with 2 teaspoon / 4 g earl grey or Lady grey loose leaf tea leaves
  • 3 tablespoon chia seeds black kind
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup or honey

Instructions

  1. First in a small pot filled with milk and bring to medium heat on the stovetop. Add the tea bag, reduce to low-heat, cover and steep for 5 minutes until the milk turns slightly brown.  Remove this off heat. If needed, strain the milk tea through a tea strainer to remove any tiny leaves that escaped the bag.  Transfer the liquid to an airtight container to cool down completely in the fridge.
  2. Once the milk tea has cooled, whisk in chia seeds, maple syrup and vanilla extract until combined. Allow this to soak for 10 minutes and then stir again to break up any clumps.
  3. Seal the container and store in the fridge for 3-4 hours or overnight for chia seeds to fully expand. Then serve with berries or other fruits, coconut flakes or any toppings of your choice.
