Easy Skinny Quinoa Chili

A super easy weeknight skinny chili with quinoa.

Ingredients

  • 1 lb ground beef grass fed, lean
  • 1 onion chopped, small
  • 3-4 garlic chopped, cloves
  • 1 ½ tablespoon chili powder
  • 3 teaspoon cumin
  • 3 diced tomatoes 14.5 oz, canned
  • 2 ½ cups chicken stock
  • 1 Kidney Beans can
  • ½ cup quinoa uncooked
  • salt to taste
  • black pepper to taste

Instructions

  1. Brown ground beef in a non stick skillet. Remove from pan.
  2. Add onions and garlic and cook for about 5 minutes until translucent.
  3. Add beef back to pan. Add remaining ingredients and stir.
  4. Bring to a boil. Reduce heat and simmer for 30 minutes.
