Instructions

For the Sloppy Joe Meat Mixture:

  1. Heat oil in a large pot over medium-high heat, add the beef, and cook, stirring with a wooden spoon to break the meat into pieces until the beef is browned, about 10 minutes.
  2. Add the onions, poblano, jalapeño, and garlic; cook, often stirring, until the vegetables are softened, about 6 minutes. Stir in the tomato paste and cook, stirring for 2 minutes. Add the crushed tomato, Worcestershire sauce, beef bouillon, smoked paprika, and red pepper flakes.
  3. Reduce the heat to medium-low, covered, stirring occasionally o make sure it does burn until the sauce has thickened, about 30 minutes. (If in rush, cook for 15 minutes without a lid). Taste the sloppy Joe mixture and adjust the seasonings. (If you like your Sloppy Joe sweet, feel free to add 1 teaspoon or more of light brown sugar or ketchup.)

For the Bread:

  1. Preheat the oven to 350°F and set a rack in the middle. Butter the inside of the telera or hamburger buns and place on a baking sheet, butter side up toast in the oven until warm and slightly crispy, about 5 minutes.

To Assemble the Sloppy Joe:

  1. Spoon the sloppy joe meat mixture onto the toasted telera bread or hamburger buns and serve.
