Description

This copycat cookie recipe mixes all-purpose flour, baking soda, butter, two sugars, vanilla extract, an egg, chocolate chips, and crumbled chocolate crackers to form a dough. The crushed chocolate crackers add flavor and texture reminiscent of graham crackers found in traditional s'mores. The dough is portioned into large or bite-sized balls and baked at 350°F for 10-12 minutes until golden brown.

Once baked, several marshmallows are placed atop each cookie and caramelized with a blow torch to achieve melted, toasted marshmallow tops. This step contributes a classic s'mores taste combining chocolate, toasted marshmallow, and graham cracker notes in cookie form.

  • 2.5 g baking soda 1 tsp
  • 1/3 cup butter at room temperature, unsalted
  • 1/3 cup white sugar
  • 1/2 cup brown sugar
  • 5 dops vanilla extract
  • 1 egg large
  • 3/4 cup chocolate chips
  • 8-10 marshmallows
  • 1/2 cup chocolate crackers or chocolate Graham cracker crumbs, blended
  • pinch salt
  • white chocolate melted

Instructions

  1. Preheat oven to 350°F (175°C) and line a large cookie sheet with parchment paper.
  2. In a large bowl, beat together the butter, white sugar, and brown sugar with a hand or a stand mixer until the mixture the sugar mixture becomes creamy.
  3. Crack in the egg and add 5 drops of vanilla extract. Give it a good mix.
  4. Using a rolling pin crush graham cracker pieces into fine crumbs.
  5. Gradually add the dry ingredients: flour, baking soda, graham cracker crumble, and salt. Add chocolate chips. Mix with a wooden spoon. Don't over-mix.
  6. Form cookie dough balls and arrange them on the baking sheet, you can use a cookie scoop. Make the balls into huge cookies (just like the massive s'mores Crumbl cookies) or into smaller cookies (for a bite-sized experience).
  7. Bake these goodies for 10-12 minutes until they're golden brown and irresistible.
  8. Once the cookies are out of the oven, place a couple of marshmallows on top of each cookie. Burn the top of the marshmallows with a blow torch. Alternatively, turn the broiler on setting on high, and return the cookies to the oven for 1-2 minutes until the marshmallows are lightly brown.
