Easy Snowball Cookies [Various Flavors]
Description
The Easy Snowball Cookies recipe combines softened vegan butter with vanilla and powdered sugar creamed until smooth, then folded with a precise measure of flour and salt to produce a soft dough. Formed into small balls and baked at 400°F on parchment or silicone mats, the cookies develop lightly browned bottoms while remaining soft on top. After a brief cooling period on the hot baking sheet, they are gently rolled in additional powdered sugar to form a delicate outer coating.
The resulting cookies have a tender crumb and melt-in-the-mouth quality from the vegan butter base, highlighted by the vanilla flavor. Baking time is critical to prevent dryness, aiming for barely golden bottoms and soft tops that set on cooling. Uniform cookie sizing helps them bake evenly.
These cookies can be enjoyed fresh or stored for later occasions and provide a vegan alternative to traditional snowball or Mexican wedding cookies with careful ingredient handling and baking technique.
Ingredients
- 1 cup vegan butter unsalted, softened
- 1 teaspoon vanilla
- ½ cup powdered sugar plus extra for coating
- 2 ¼ cups flour
- ½ teaspoon salt
Instructions
- Preheat the oven to 400 degrees F, and move one of the oven racks to one level higher than the middle level. Line a baking sheet with a silicone mat or parchment paper.
- Using an electric mixer, beat the vegan butter, vanilla, and powdered sugar until very fully and creamy. About 3 to 4 minutes.
- In a small bowl, combine the flour and salt.
- Add the flour mixture to the bowl with the vegan butter and mix well until fully incorporated.
- Form dough into two tablespoons of dough in your hand. Roll them into a ball and set them on the prepared baking sheet.
- Bake for 9 to 10 minutes or until the bottom of the cookies are lightly browned, but the top is still soft and feels a bit raw.
- Remove the cookies from the oven and set the baking sheet on a cooling rack. Allow it to sit on the hot baking sheet for 5 minutes. One by one, gently roll the cookies in a more powdered sugar. Place the cookies on coolingng rack and allow to cool for 1 hour until fully set.
Notes
- Measure flour by fluffing, then spooning into the cup and leveling to avoid dense cookies.
- Use vegan butter at room temperature but not melted to prevent spreading during baking.
- Form cookies with a cookie scoop for uniform size and even baking.
- Do not overbake; remove when bottoms are just turning golden and tops remain soft for best texture.
