Easy Soufflé Pancake Recipe

The Easy Soufflé Pancake Recipe creates a fluffy, airy pancake with a delicate texture achieved by folding softly beaten egg whites into a rich batter of egg yolks, cream, milk, flour, and sugar. Cooking in a covered skillet until the bottom is lightly browned and topping with berries before finishing under a low grill ensures the pancake cooks through gently while maintaining its tall, soufflé-like form. This pancake offers a tender center with a lightly crisp edge, enhanced by fresh fruit and optional maple syrup.

Description

This souffle pancake starts with a batter of egg yolks blended with cream and milk, combined with flour, sugar, salt, and melted butter for richness. Separately, the egg whites are whipped until soft peaks form, then gently folded into the batter to retain air for volume. The batter is poured into a buttered, ovenproof skillet and cooked covered over medium heat, allowing the bottom to set and bubbles to form around the edges, indicating readiness to flip or finish.

Once lightly browned on the bottom, berries such as strawberries and blueberries are added on top. The skillet then goes under a low grill or broiler to brown the top and set the center, resulting in a tall, soft pancake with a soufflé-like lightness. The texture combines a tender crumb with fluffy lift, complemented by the fresh fruit sweetness.

Serve the soufflé pancake dusted with powdered sugar alongside maple syrup for added sweetness. This type of pancake is suitable as a special breakfast or brunch item, offering a visually impressive and light alternative to traditional pancakes. Variations can include different berries or toppings depending on preference.
