Easy Strawberry Cookies
Description
The recipe mixes eggs, lemon juice, vegetable or alternative oils, vanilla, and sugar to form a wet base before combining with flour and baking powder to form a dough. Fresh strawberries are gently folded in last, preserving chunks for texture and bursts of flavor. The dough is portioned into golf ball-sized balls, placed on parchment-lined sheets, lightly sugared on top, and baked.
Once baked, the cookies have a soft texture with moist strawberry pieces throughout. They are cooled completely before serving to let them set. Optionally, the cookies can be dusted with powdered sugar before serving to add light sweetness and presentation detail.
These cookies store well in airtight containers at room temperature or refrigerated for longer freshness. Freezing is possible after initial firming on a cookie sheet, extending their shelf life for months. Thawing at room temperature restores their softness and flavor.
Ingredients
- 1 large egg
- 2 tablespoons lemon juice
- ½ cup vegetable oil or coconut oil or light olive oil or melted butter
- ½ teaspoon vanilla
- ½ cup granulated sugar 2 tablespoons
- 1¾ cups all-purpose flour
- 1½ teaspoons baking powder
- 1 cup strawberries chopped
Instructions
- Pre-heat oven to 350F (180C) line 1 or 2 cookie sheets with parchment paper.
- In a large bowl whisk together the egg, juice, oil, vanilla and sugar, until well combined.
- Add flour and baking powder and mix until combined, gently mix in the chopped strawberries just until combined. Form into balls (approximately the size of a golf ball. Place on prepared cookie sheets, sprinkle with a little granulated sugar and bake for approximately 15 minutes. Let cool completely and enjoy! Dust with powdered sugar before serving if desired.

- Store completely cooled cookies in airtight containers at room temperature for up to 3 days or refrigerate up to a week.
- Freeze cookies on a sheet first until firm, then transfer to freezer-safe containers for up to 3 months.
