These homemade strawberry pancakes are easy to make and they're going to be a hit with the tiny juicy berries hidden inside each fluffy pancake bite.

Ingredients
- 1 ½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 tablespoon sugar
- 1 ¼ cups milk
- 1 egg
- 3 tablespoons butter melted
- 1 cup strawberries diced
Instructions
Make the pancake batter:
- Wash the strawberries, remove the stem, and dice them into pieces. If using frozen strawberries, thaw them out first by running them under water or using the defrost setting of your microwave.
- In a large bowl, sift together the flour, baking powder, salt, and sugar. Make a well in the middle and pour the milk, egg, and butter. Mix with a whisk or fork until the batter is almost smooth -some lumps are ok. Fold the strawberry pieces into the batter.
Cook the pancakes:
- Heat a non-stick griddle or large pan over medium-high heat. I set my griddle at 300-350 F, but this will vary by model. Once hot, grease, spray, or melt butter on the hot surface.
- Immediately, pour ¼ cup of batter onto the greased pan. Cook the pancakes for about 2 minutes, until the edges begin to look defined and bubbles form. Flip the pancakes over and cook for another minute on the other side. Remove from the pan onto a plate, keep warm, and cook the rest.
- Serve the warm pancakes topped with your favorite toppings and syrup.
