Description
Easy Strawberry Poke Cake begins with a standard white cake mix baked until nearly done in a 9x13 pan. While warm, holes are poked throughout the cake’s surface. Strawberry gelatin mixed with boiling water is poured over the cake, seeping into the holes and infusing moisture and strawberry flavor evenly. The cake is then chilled for a couple of hours to set.
Once cold, a thawed whipped topping is spread over the entire cake, creating a light, creamy layer that complements the strawberry-soaked cake beneath. Fresh strawberries may be placed on top at serving time for added fruitiness and presentation.
This cake offers a moist texture with sweet strawberry notes and a smooth finish from the whipped topping. It suits casual celebrations or anytime a quick strawberry dessert is wanted.

Ingredients
- 1 box white cake mix (plus ingredients to make the cake - check the box for directions)
- 1 oz package strawberry gelatin mix
- 1 cup water boiling
- 8 oz container whipped topping thawed, frozen
Instructions
- Prepare, and bake cake in a 9×13" baking pan, according to package directions. Cake is done when a toothpick inserted in the center comes out with just a few moist crumbs.
- While cake is still warm, poke holes in the cake with the end of a wooden spoon (or with tines of a fork, about 1/2" apart).
- In a small mixing bowl, combine boiling water and Jello mix. Whisk until fully combined.
- Pour Jello evenly over the warm cake, pouring slowly and evenly to cover the whole cake, which fills the holes. Cover cake with foil and refrigerate for at least 2 hours, or until cooled.
- When cake is cooled, spread whipped topping evenly over the entire top of the cake.
- To serve, top cake with strawberries right before serving.
Notes
- This cake can be made up to the point of pouring the gelatin a day or two ahead and refrigerated, covered with foil.
