Easy Strawberry Shortcake
Description
Easy Strawberry Shortcake combines keto drop biscuits with fresh strawberries and a sweetened whipped cream topping. The biscuits are flavoured with vanilla and a monk fruit sweetener, baked until tender, then cooled before serving. Fresh strawberries are sliced to retain their natural juiciness and layered over the biscuits. The cream is beaten cold to stiff peaks, sweetened with stevia for balanced sweetness without sugar. This assembly results in a dessert that delivers a tender biscuit base, fresh fruit brightness, and the light richness of whipped cream.
The method relies on preparing the biscuits first, letting them cool completely to maintain structure when sliced. Whipping the cream in a chilled bowl helps achieve stiff peaks, making it stable for layering. The combination of monk fruit and stevia provides sweetness without sugar, suitable for low-carb or keto lifestyles.
Serve the shortcakes immediately after assembly to enjoy the contrast of textures between warm biscuits and cool cream and strawberries. This dessert works well as a light finish to summer meals or as a sweet snack.
