Easy Strawberry Shortcake features biscuits as the foundation, made by pulsing cold butter into a mixture of flour, sugar, baking powder, and salt to create a flaky texture. The dough is then baked until golden with a crunchy coarse sugar topping. Meanwhile, fresh strawberries are sliced and combined with sugar to draw out their natural juices. Whipped cream, flavored with vanilla and powdered sugar, is whipped to stiff peaks for a rich topping. The cooled biscuits are split and layered with the macerated strawberries and whipped cream, then topped with the biscuit halves to complete the dessert.

  • 2 cups flour
  • 1/4 cup sugar , divided
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter , cold, cut into small cubes
  • 1 cup milk whole
  • 1/4 cup sanding sugar coarse
  • 2 pints strawberries , hulled and sliced
  • 2 cups heavy whipping cream
  • 2 teaspoons vanilla extract
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat the oven to 425 degrees.
  2. Add the flour, 2 tablespoons sugar baking powder, salt and butter into a food processor and pulse until the butter is in pea sized crumbles.
  3. Add in the milk, pulsing until the dough comes together.
  4. Using a cookie scoop, add the shortcake dough onto a silicon baking mat on a sheet pan and sprinkle each dough mound with 1/2 tablespoon of coarse sanding sugar.
  5. Bake for 12-15 minutes.
  6. While the biscuits are baking, add the remaining two tablespoons of sugar to the bowl with the strawberries and stir together.
  7. In a medium sized bowl add the heavy cream and beat with a hand mixer or in your stand mixer until soft peaks form.
  8. Add in the vanilla extract and powdered sugar and whip for an additional 15-20 seconds until stiff peaks form.
  9. Once the biscuits are cooled, split them in half, top with strawberries and whipped cream (Using a spoon or a pastry bag with a #1 tip), then top with the biscuit top.
