Easy Sugar Cookies
Description
Easy Sugar Cookies rely on a blend of butter softened with cream cheese which gives the cookies a moist and tender base. Sweetened with granulated sugar and light corn syrup, the dough achieves a slight chewiness once baked. The inclusion of both vanilla and almond extracts offers a nuanced aroma and mild sweetness. After mixing the wet and dry ingredients gently to avoid overworking the dough, the cookies are portioned into balls spaced apart for spreading during baking. Baking at 350 degrees Fahrenheit for about 12 minutes produces cookies that have lightly crisped edges but remain soft in the center, creating a pleasant texture contrast.
These cookies can be served plain, allowing the simple flavors and soft texture to shine. They are suitable for dessert plates, tea-time snacks, or seasonal trays.
Ingredients
- 1 cup butter softened, salted
- 1 1/4 cups granulated sugar
- 1/4 cup cream cheese
- 2 tablespoons light corn syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 large egg
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1/4 teaspoon baking soda
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large mixing bowl, use a hand mixer to cream the softened butter, granulated sugar, and cream cheese together until the mixture is light and fluffy, about 2–3 minutes. Add the corn syrup, vanilla extract, almond extract, and egg. Scrape down the sides and bottom of the bowl to ensure everything is well incorporated.
- Gradually add the all-purpose flour, baking powder, salt, and baking soda to the wet ingredients. Mix on low speed until just combined.
- Using a spoon or cookie scoop, portion out dough into balls, using approximately 2 tablespoons of dough for each cookie. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart to allow for spreading during baking.
- Bake in the preheated oven for 12 minutes, or until the edges of the cookies are just starting to turn golden. The centers will remain soft.
- Remove the baking sheet from the oven and let the cookies cool on the pan for 2–3 minutes to set. Transfer the cookies to a cooling rack to cool completely before serving or storing.
