Easy Swedish Meatballs (IKEA Copycat)

Easy Swedish Meatballs combine ground beef and pork with onion, garlic, nutmeg, allspice, and dill for a balanced, spiced meat mixture. Grilled until golden, the meatballs are finished in a creamy beef stock and cream gravy. Typically served with mashed potatoes, lingonberry jam, and pickled cucumber, this recipe recreates a classic Swedish comfort food with tender, flavorful meatballs and a smooth sauce.

Description

This recipe mixes equal parts ground beef and pork with finely grated onion and garlic, seasoned with warm spices nutmeg, allspice, and fresh dill. Formed into small 25g meatballs, they are grilled on a rack for even browning and cooking. The meatballs then simmer in a creamy gravy made from beef stock thickened with cornflour and enriched with heavy cream, creating a smooth, mild sauce that coats the tender meatballs.

The contrast between the lightly spiced, juicy meat and the rich cream sauce provides a traditional Swedish flavor profile. Serving alongside mashed potatoes offers a comforting, textural balance, while lingonberry jam adds tartness and pickled cucumbers introduce acidity, rounding out the dish.

The recipe notes freezing suitability and suggests the beef and pork mix for better flavor, emphasizing practical preparation and storage tips.

Ingredients

Servings

Easy Swedish Meatballs

  • 250 g ground beef see note 1
  • 250 g pork mince (see note 1)
  • 1 onion grated, small
  • 1 garlic grated or crushed, clove
  • ¼ teaspoon nutmeg (ground)
  • ¼ teaspoon allspice (ground)
  • 1 tablespoon dill chopped finely (plus extra for garnish)
  • salt to taste
  • black pepper to taste

Creamy Gravy for Swedish Meatballs

  • 2 tablespoons cornflour
  • 550 ml beef stock (From a cube is fine – I used 2 Kallo organic beef stock cubes)
  • 50 ml heavy cream double

To serve

  • potato mashed
  • lingonberry jam or cranberry sauce
  • pickled cucumbers

Instructions

  1. Start by placing all the ingredients for the meatballs into a large bowl and mixing together with your hands until well combined.
  2. Divide the mixture into quarters and then make 5 meatballs from each quarter (so 20 meatballs in total). Each meatball will weigh approximately 25g (I like to weigh my first meatball as a guide and then try to make the others about the same size).
  3. Put the meatballs on an oiled grill rack over a tray covered in foil and place under a medium hot grill (broiler) for 7 minutes on each side, or until golden brown and cooked all the way through.
  4. While the meatballs are cooking, get your creamy gravy started... In a large jug, mix the cornflour with a small amount of cold water to make a paste, then add the beef stock. Pour into a large wide saucepan or frying pan and cook over a medium heat until nicely thickened. Add the double cream and mix together thoroughly.
  5. Finally add the meatballs to the creamy gravy. Cook the meatballs in the cream sauce for 1 more minute and then serve with the mashed potatoes, lingonberry jam (or cranberry sauce) and picked cucumber. Garnish with dill.

Notes

  • Combining beef and pork mince enhances the flavor compared to using beef alone.
  • These meatballs freeze well, making them convenient for make-ahead meals.
