Easy Swiss Steak
Description
The recipe begins by pounding round steak to a half-inch thickness and dredging it in a mixture of flour, paprika, garlic powder, and black pepper. The steak is browned in olive oil, then layered over chopped onions and carrots in a covered pot. A sauce made from canned diced tomatoes, beef broth, and Worcestershire sauce is poured over the meat.
The pot is covered and slow-cooked for two and a half to three hours, allowing the meat to become tender while the vegetables soften and the sauce thickens. The long cooking time helps break down the tougher cuts of beef.
This dish is traditionally served over mashed potatoes to complement the rich, tomato-based sauce and tender beef slices, making it a satisfying family meal.
An optional step to thicken the sauce involves mixing cornstarch with water and stirring it into the boiling sauce after removing the meat. This adjustment can create a more gravy-like consistency.
Ingredients
- 1 ½ pounds round steak
- ½ cup all-purpose flour
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- 2 tablespoons olive oil or as needed
- 2 onion chopped
- 2 carrot chopped
- 28 ounces diced tomatoes with juices, 1 can, canned
- 10 ounces beef broth 1 can
- 1 tablespoon Worcestershire sauce
- 1 tablespoon cornstarch optional, see note below
Instructions
- Preheat oven to 350°F.
- Using a meat mallet, pound meat to ½″ thickness.
- Combine flour, paprika, garlic powder, pepper & salt to taste. Dredge meat in flour mixture.
- Heat 1 tablespoon of olive oil over medium heat in a dutch oven. Brown steaks on each side (adding additional olive oil if needed). Set aside.
- Place onion & carrot in the bottom of the pot. Top with browned steaks.
- Add remaining ingredients except for cornstarch. Cover and cook for 2 ½-3 hours.
- Serve over mashed potatoes.
Notes
- For a thicker tomato gravy, remove the meat after cooking and stir in a cornstarch slurry (cornstarch mixed with water) into the boiling sauce until thickened.
- Serve the dish over mashed potatoes to soak up the flavorful sauce.
