Description
Easy Taco Casserole features diced chicken breasts cooked with taco seasoning alongside sautéed onions and colorful bell peppers. Combined with cooked rice, black beans, corn, salsa, and chicken broth, the mixture offers a balanced combination of protein, vegetables, and grains. The casserole is layered with crushed Doritos on the bottom and top, creating a contrasting crisp texture that holds the savory filling together. Ingredients
- 2 tbsp olive oil
- 1 yellow onion diced, or white onion
- 1 red pepper diced
- 1 green pepper diced
- 2 chicken breast diced, large
- 3 tbsp taco seasoning
- 2 cups rice cooked
- 1 cup black beans
- ½ cup corn yellow
- 1 ½ cups salsa
- ½ cup chicken broth low sodium
- 9.25 oz cool ranch Doritos lightly crushed, or Nacho Cheese Doritos, package
- 1 ½ cups cheese shredded Mexican style
Instructions
- Preheat the oven to 350 degrees.
- Heat the oil in a large pan or non stick skillet over a medium high heat. Add the onions and the peppers and cook for 6-8 minutes until the onions have softened and are starting to color.
- Toss the chicken with the taco seasoning and add to the pan. Reduce the heat to medium and sauté until cooked through. This should take another 6-8 minutes. Remove the pan from the heat.
- Stir in the rice, black beans, corn, salsa and chicken broth.
- Layer half of the Doritos on the bottom of a large baking dish and spoon the casserole mix on top. Top with the remaining Doritos and sprinkle with Mexican style cheese.
- Bake for 20 minutes until the chicken and rice mixture has heated through, and the cheese has melted on top of the Doritos and started to bubble and turn golden.
Notes
- Avoid adding extra salt; the taco seasoning and Doritos provide ample seasoning.
- Cooked shredded chicken can replace fresh chicken breasts; add seasoning to onions before mixing in the chicken.
- The chicken and rice mixture can be made up to 3 days ahead and refrigerated; however, the casserole is best served fresh due to the topping's crispness.
