Easy Taco Casserole

Easy Taco Casserole layers seasoned ground beef with beans, corn, tomatoes, and cheese between crushed cornflakes or tortilla chips, baked until bubbly and golden. The combination of chili and cumin seasonings with the texture of cornflakes and melted cheese results in a hearty casserole with a crunchy topping. It’s versatile for toppings like avocado, sour cream, or cilantro, adding freshness to the rich filling.

Description

This recipe starts by browning ground beef with diced onions and a blend of chili powder, garlic powder, and cumin for classic Mexican-style seasoning. Black beans, corn, and crushed tomatoes are added along with shredded cheese, creating a saucy, flavorful meat mixture. Layers of crushed cornflakes or crushed tortilla chips alternate with the taco mixture and cheese in a baking dish, finishing with cheese on top.

Baking until the dish is bubbly and the cheese is golden creates contrasting textures between the soft interior and crunchy topping. The cornflakes or chips add a crisp layer to the casserole. Optional toppings such as tomato, green onion, avocado, cilantro, black olives, sour cream, or yogurt provide additional flavor and balance.

Leftover casserole should be stored in an airtight container and consumed within four days. Using lite or fat-free cheese and healthier cornflake options can reduce calories. Serving with extra tortilla chips adds crunch. This dish offers a filling and flavorful way to enjoy taco ingredients in a baked casserole format.
