Ingredients

Servings

For the taco meat:

  • 2 teaspoons olive oil or avocado oil
  • 1 lb ground beef lean
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons cumin ground
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon oregano dried
  • 1/2 cup water

For the Flatbread:

  • flatbread store bought
  • 1 cup refried beans homemade or canned
  • 1/4 cup salsa or taco sauce
  • 2 cups cheddar cheese or shredded Mexican blend cheese

Toppings:

  • 1 cup lettuce shredded
  • 1 cup tomato chopped
  • 1 avocado chopped
  • 1/4 cup cotija cheese crumbled
  • red onion pickled
  • cilantro chopped

Instructions

  1. Preheat the oven to 425 degrees F.
  2. To make the taco meat: In a medium skillet, heat the oil over medium-high heat. Brown the ground beef for about 5 minutes, breaking up the meat into small pieces using a wooden spoon. Season with chili powder, cumin, salt, paprika, garlic powder, onion powder, and oregano. Pour in the water and let simmer for 5 minutes or until thickened. Turn off heat and set aside.
  3. Place the flatbreads on 2 large baking sheets. Spread equal amounts of the refried beans on top of each flatbread. Spread a little salsa or taco sauce over the beans. Top evenly with cooked taco meat and shredded cheese. You might have leftover taco meat, depending on how thick you like your meat layer.
  4. Place the baking sheets into the hot oven and bake for 8 to 10 minutes or until the cheese has melted.
  5. Remove from the oven and top with shredded lettuce, tomatoes, avocado, cotija cheese, pickled red onions, and chopped cilantro. Or whatever toppings you want! Serve warm and enjoy!

Notes

  • I use store bought Stonefire flatbread. You can buy 2 large ones or use 4 regular/medium size. If you can’t find flatbread, you can also use pita bread and make taco pita pizzas. This recipe is flexible. I put ingredient amounts and topping ideas, but build your own!
