Easy Tamale Pie

Easy Tamale Pie layers a spiced mixture of ground beef, black beans, diced tomatoes, and cheese beneath a cornbread crust made from boxed mix. Sautéed onions, garlic, chili powder, and kosher salt build rich savory flavors. The dish is baked in a skillet or casserole dish until the cornbread topping turns golden and the center cooks through. It's a hearty and comforting one-pan meal with flexible garnish options like salsa and sour cream.

Description

Easy Tamale Pie features ground beef cooked with minced onion, garlic, chili powder, and seasoning, combined with drained black beans and diced tomatoes. Adding shredded cheese into the meat layer adds creaminess and flavor. A cornbread batter prepared from a packaged mix is spread evenly on top. Baking at high temperature develops a golden crust on the cornbread while gently baking the filling underneath. Adjusting bake time based on the pan and cornbread brand ensures the center is fully cooked. This casserole provides a balance of savory, spicy, and cheesy elements in a simple, assembled dish.

Serve Easy Tamale Pie hot with optional garnishes such as sour cream, salsa, sliced green onions, chopped cilantro, or extra shredded cheese to add freshness and creaminess.

If using an oven-proof skillet is unavailable, transfer the beef mixture to an oven-safe baking dish to assemble the layers; bake times may vary accordingly.

  • 1 lb ground beef 90% lean
  • 15 oz black beans drained and rinsed
  • 14.5 oz diced tomatoes drained
  • 1 cup cheddar cheese or Mexican blend cheese, shredded

Instructions

  1. Preheat: Adjust oven rack to lower middle position and heat oven to 450F*
  2. Aromatics: In a 12 inch ovenproof skillet over medium heat, warm up the oil until hot. Add onion, chili powder, and 1/2 tsp salt and cook just until onion is soft. Stir in garlic and cook 30 more seconds.
  3. Cook: Stir in ground beef, drained beans, and drained tomatoes. Cook and break up the meat with a spatula until fully browned, about 5 min. Off heat, stir in cheese. Season with kosher salt to taste. Add more chili powder if desired. Smooth beef mixture into an even layer in the skillet.
  4. Prepare Cornbread: According to package instructions, mix the cornbread batter. Spread cornbread batter evenly on top of the beef mixture in skillet.
  5. Bake: Bake until edges are golden brown, approx. 15 minutes. Check center of cornbread for doneness. If needed, cover loosely with foil and bake another 5 minutes or until center is cooked through. Let rest at room temperature 10 minutes before serving. Garnish as desired.

Notes

  • If you lack a 12-inch ovenproof skillet, assemble the layers in another oven-safe dish and adjust baking times to ensure the cornbread is cooked through.
  • Baking duration may need slight modifications depending on the thickness of the cornbread batter and the brand used.
  • Your feedback on this recipe is appreciated to help improve it further.
