													These easy peanut noodles are bursting with flavor and easy to whip up in 30 minutes or less! This delicious sauce will have you licking the bowl!

                                Ingredients
- 1 lb chicken thighs cubed
 - 1 package Spaghetti
 - 1 cup carrots shredded
 - 2 crowns broccoli chopped
 - 6 cloves garlic diced
 - 1 talk green onion chopped
 
Peanut Sauce Ingredients
- 1 cup peanut butter
 - 1/2 cup coconut milk
 - 1/4 cup soy sauce
 - 3 tsp rice vinegar
 - 1 tsp sesame oil
 - 1 tsp honey optional
 - juice from 1 lime
 
Instructions
- Boil water and prepare noodles according to directions on package.
 - In medium mixing bowl, combine peanut butter, coconut milk, soy sauce, vinegar, lime juice, and honey, and whisk until smooth.
 - While pasta is cooking, sauté chicken thighs in large pan until just browned on outside.
 - Add carrots, broccoli, and garlic to pan with chicken and cook until veggies are tender.
 - Add noodles and sauce to sauté pan with chicken and veggies. Stir until everything is well coated with sauce.
 - Top with chopped green onion or your favorite garnish.
