Easy Vegan Chopped Salad

To make vegan Italian chopped salad

  • 4 cups romaine lettuce chopped
  • ½ cup endive chopped
  • 1 cup tomatoes chopped
  • ½ cup Red Onions chopped
  • ½ cup red bell pepper chopped
  • ¼ cup fresh parsley chopped

To make champagne vinaigrette

  • ¼ cup champagne vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup
  • ½ cup olive oil
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper adjust to taste

Instructions

Make the chopped salad

  1. In a large mixing bowl, combine the chopped vegetables and fresh parsley.
  2. Toss the salad until all the ingredients are evenly distributed.

Make champagne vinaigrette

  1. In a small mixing bowl, whisk together the champagne vinegar, Dijon mustard, and maple syrup.
  2. Slowly drizzle in the olive oil while whisking the mixture continuously until the vinaigrette is emulsified and well combined.
  3. Season the vinaigrette with salt and black pepper to taste.
  4. Drizzle the chopped salad with the vinaigrette and serve fresh.

Notes

  • Wash and dry veggies thoroughly; chop for varied texture. You can also use a food processor to chop the ingredients. 
  • Mix different greens for a flavorful base.
  • Add plant-based proteins like chickpeas, black beans, or quinoa.
