🥗 Move over, boring salads! This Italian chopped salad packs all your favorite sandwich fixings into one crunchy, satisfying bowl - ready in 10 minutes and infinitely customizable with whatever's in your fridge.

Ingredients
- 10 slices vegan or regular salami, cut into matchsticks
- 1 cup chopped cucumber
- 1 pint baby tomatoes, quartered
- 1/2 cup Thinly sliced red onion
- 1/2 cup black olives, chopped
- 1/2 cup shaved Parmesan cheese
- 6 cups chopped iceberg or romaine lettuce
- 8-10 pepperoncini, thinly sliced
Dressing
- 2 tbsp grainy or dijon mustard
- 2 tbsp red wine vinegar
- 6 tbsp olive oil
- 1 tbsp liquid honey
- 1 tsp salt
- 1/2 tsp ground pepper
- 1 garlic clove, grated or pressed
- 1/2 tsp chili flakes

Instructions
- Make the dressing by whisking the ingredients together or shaking in a mason jar and set aside.
- Make the salad by combining all of the ingredients and drizzle the dressing over. Toss and serve!
Notes
- Make this salad as the perfect side to any main protein OR serve this salad for two people and top with a protein for a main dish!
- You can certainly meal prep this salad BUT keep the dressing in a separate container until ready to eat. Then, add the dressing, toss and serve.
