  • 2 apple peeled and cored (i used fuji, large
  • 3 tablespoons coconut sugar
  • 1 tablespoons almond flour
  • 2 teaspoons tapioca starch
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice fresh

For the topping:

  • 1/2 cup rolled old fashioned oatmeal (gf if needed.) (45 grams)
  • 1/3 cup almond flour 34 grams
  • 1/4 cup tapioca starch 30 grams
  • 1/4 cup almonds roughly chopped (22g, slivered
  • 1/4 cup coconut sugar
  • Pinch salt
  • 3 tablespoons coconut oil melted, plus 1/2 teaspoon

Instructions

  1. Preheat your oven to 350 degrees and rub a pie plate with coconut oil.  Slice all the apples very thinly.
  2. In a large bowl, stir together the apples and ALL of the apple ingredients and spread evenly into the prepared baking dish.
  3. In a separate medium bowl, stir all the topping ingredients together, except the oil. Once mixed, add in the oil and use your hands to mix together until crumbly, leaving some large crumbs for texture.
  4. Spread all over the top of the apples and bake until golden brown and the apples are soft and bubbly, about 50-60 minutes. Let cool for 10-20 minutes.
  5. DEVOUR with dairy-free ice cream!
