The mixture is gently cooked in a saucepan over medium-low heat while whisking continuously until it thickens to a pudding-like texture. This careful cooking prevents clumping and ensures even thickening. After thickening, the filling is poured into the crust and refrigerated for at least six hours or overnight to achieve a firm set suitable for slicing.

The flavor balances the tartness of lime with a creamy richness from coconut cream and tofu, while the crust adds a contrasting crunch. Optional vegan whipped cream topping and extra lime zest provide additional texture and brightness, enhancing presentation and flavor complexity.

  • 1 graham cracker pie crust store-bought, vegan
  • 1 cup granulated sugar
  • 2 tablespoons lime zest plus more for garnish
  • ¾ cup of lime juice (about 4 limes)
  • 1 coconut cream 5.4-ounce can
  • ½ cup corn starch
  • ½ teaspoon salt
  • ¼ cup vegan butter
  • ½ teaspoon vanilla extract
  • ½ firm tofu super-firm, 16-ounce block
  • Whipped Cream optional, store bought, vegan

Instructions

  1. Have the pie crust ready aside.
  2. In the cup of a blender, add all of the ingredients. Blend for 2 minutes or until completely smooth.
  3. In a medium saucepan over medium low heat, heat the mixture until it thickens. Whisk continuously to prevent burning or sticking to the pot. If you see it starting to clump, lower the heat.
  4. Once it is very thick, pour the mixture into the pie crust.
  5. Level the mixture and place it in the refrigerator for at least 6 hours or overnight.
  6. Optionally, top with vegan whipped cream and sprinkle some more lime zest.
  7. Serve immedietey.

Notes

  • Only zest the green part of the limes to avoid bitter white pith in the filling.
