Easy Vegan Thai Naan Pizza

A mix of red curry and tomato paste creates the sauce for this Easy Vegan Thai Naan Pizza. Throw on some veggies and this pizza is ready in less than 20 minutes!

Ingredients

  • 2 Naan flatbread
  • 2 TBS red curry paste
  • 3 TBS tomato paste
  • onion red, chopped
  • red bell pepper thinly sliced
  • carrot grated
  • nutritional yeast
  • cilantro

Instructions

  1. Preheat oven to 350F and place naan on baking sheet. Set aside.
  2. In small bowl, mix together red curry paste and tomato paste. Using a rubber spatula or spoon, evenly distribute sauce on naan. Top with onion, bell pepper, grated carrots, and nutritional yeast. Garnish with cilantro if desired.
  3. Bake pizzas for 15-20 minutes, or until naan has crisped up.
  4. Allow pizzas to cool for 5 minutes before slicing and serving, enjoy!

Notes

  • -Store leftovers in airtight container in fridge about 5 days, or tightly wrapped in freezer up to 1 month. Allow to thaw at room temperature before heating in microwave or in oven again.
