Easy vegetable taco soup

Ingredients

  • 1 onion finely chopped
  • 2 tsp garlic crushed
  • 4 cups pepper fresh, frozen or canned
  • 4 cups mushroom
  • 4 cups sweet potato
  • 4 cups cauliflower
  • 4 cups kale
  • 4 cups spinach
  • 4 cups carrot
  • 4 cups celery
  • 4 cups Green bean
  • 4 cups potato
  • 4 cups zucchini
  • 2 tsp taco seasoning
  • 1 tsp oregano dried
  • 1 tsp paprika
  • 1 tsp chili powder
  • 400 g (14oz) tomato chopped
  • 2 tbsp tomato paste
  • 4 cups stock or water
  • 2 cups corn (fresh, frozen or canned)
  • 400 g (14oz) black beans drained
  • sugar pinch of
  • salt to taste
  • black pepper to taste

Toppings

  • avocado
  • cheese grated
  • sour cream
  • cilantro

Instructions

  1. Heat a large pot over medium-high heat and add a few tablespoons of oil.
  2. Add all the vegetables (except for the corn) and cook for a few minutes, stirring regularly, until the vegetables start to soften and become aromatic.
  3. Add the spices and cook for another minute or two.
  4. Add the tomatoes, stock a pinch of salt and sugar and bring to a boil.
  5. Reduce the heat, partially cover and allow to simmer for 15-20 minutes or until the vegetables are cooked through.
  6. Add the beans and corn then simmer for another 5 minutes.
  7. Season to taste then serve with toppings of your choice.
