Easy Vintage Haystacks Candy
Description
This candy is prepared by gently melting butterscotch chips together with peanut butter at half microwave power to prevent scorching. Once smooth, salted peanuts and crunchy chow mein noodles are folded in to add texture. The mixture is then portioned by teaspoonfuls onto waxed or parchment paper and left to cool and harden at room temperature, which can take several hours.
Haystacks provide a combination of creamy, sweet, and crunchy elements with peanut and butterscotch flavors. This old-fashioned treat requires no baking and minimal preparation. The candy is best stored at room temperature to maintain the ideal consistency, as refrigeration can make them too hard.
Avoid overheating the butterscotch chips by stirring frequently and using reduced microwave power or a double boiler method. The candy keeps fresh in an airtight container for up to a week. Freezing is not recommended as it affects texture negatively.
Ingredients
- 1 cup butterscotch chips (recommend: Nestle Toll House brand)
- ½ cup peanut butter
- ½ cup peanuts salted
- 2 cups Chow Mein noodles (La Choy brand recommended)
Instructions
- In a large bowl, microwave the butterscotch chips and peanut butter on 50% power for 3 to 5 minutes or until the chips have melted, stirring after each one minute increment.
- Remove from the microwave and stir in the peanuts and chow mein noodles.
- Drop by teaspoonfuls onto waxed or parchment paper. Let sit until completely cooled and firm. It may take several hours for the candy to become firm.
Notes
- Use 50% microwave power and stir every minute when melting to prevent scorching the butterscotch chips.
- Alternatively, melt chips and peanut butter gently in a double boiler to avoid burning.
- Store the finished candy at room temperature in an airtight container for 5 to 7 days to maintain ideal texture.
- Refrigerating can cause the candy to harden too much; freezing is not advised due to texture changes.
