Easy Western Stuffing Egg Muffins

My Easy Western Stuffing Egg Muffins or Stuffing Cups savory breakfast recipe is filled with scrambled eggs, ham or bacon, onion and peppers.

Ingredients

Servings

Stuffing Crust

  • 1 package chicken or turkey flavored stuffing mix
  • 1 cup water
  • 2 tablespoons butter
  • sprinkles salt
  • sprinkles pepper
  • cooking spray

Plain Scrambled Eggs

  • 6 large eggs
  • ¼ cup milk
  • sprinkles salt
  • sprinkles pepper

Western Omelet Ingredients

  • 1 cup cheese, shredded, your favorite variety
  • ¼ -½ cup bacon or ham, chopped, cooked until crisp
  • ¼ cup onion, diced or chopped
  • ¼ cup sweet peppers, diced or chopped
  • green onions, thinly sliced for garnish if desired

Instructions

  1. Preheat oven to 350 degrees.
  2. Prepare a 6 hole muffin pan with cooking spray. Set aside.

Making the Stuffing

  1. Prepare stuffing as directed on package, except do not allow the stuffing to rest. Boil your water with some butter in it and as soon as it boils add stuffing mix and stir until combined. Then divide mixture, as evenly as possible, between the six holes in the muffin pan. I usually use a soup spoon to do this.
  2. Next press stuffing into the muffin hole and press it up the sides. Push the stuffing deep into the bottom of the muffin hole, especially around the lower bottom round edge. As you do this the stuffing will push up the sides of the muffin cup.
  3. Once stuffing is cool enough I usually use my fingers to do this. The stuffing does not have to reach the top of each muffin hole but get as close as you can.
  4. Next, sprinkle some cheese on the bottom of each stuffing cup, if desired. I always do. I just can't seem to help it.

Making Eggs - Omelet

  1. If you're not including any other toppings or ingredients, skip below to Making Eggs - Plain Scrambled. Otherwise this is where you add anything else you want to include. You really can add anything you desire!
  2. Add cooked and diced ham or bacon to bottom of your stuffing muffin cup.
  3. Add onion and peppers too inside each stuffing muffin cup.

Making Eggs - Plain Scrambled

  1. If you are just using some cheese and some eggs, make sure they are out and ready at your workstation. 
  2. In a bowl, using a fork, combine eggs, milk and a ½ teaspoon salt and ½ teaspoon pepper.
  3. Using a ladle or soup spoon evenly divide mixture amongst each of the muffin cups as best you can.
  4. Bake for about 20 minutes and remove from oven if wanting to add cheese. If not your eggs should be finished within 5 minutes.
  5. Add a pinch or some cheese, again if desired, and return to oven for about another 5 minutes or eggs are done to your liking.
  6. Use a toothpick to confirm that the eggs are done. The toothpick should come out clean if eggs are cooked. The scrambled eggs will also form a sort of dome that looks cooked at the top, in the middle, when they are cooked through.
  7. Don't panic, remember if you are using scrambled eggs they will expand. Serve immediately and enjoy!
