Easy White Chicken Lasagna with Spinach

This lasagna layers tender chicken, fresh baby spinach, and a creamy white sauce made with butter, garlic, cream cheese, and Parmesan. The ricotta and mozzarella add richness and a smooth texture, while the sauce is thickened with flour and gently spiced with garlic. Baking creates a bubbling, golden-topped dish that holds together well after resting.

Description

Easy White Chicken Lasagna with Spinach combines cooked chicken pieces with fresh spinach and a creamy white sauce. The sauce starts by melting butter and garlic, then thickening with flour and milk, before stirring in Parmesan, cream cheese, and spinach until wilted. Layers alternate cooked lasagna noodles with ricotta mixed with egg, chicken, cheeses, and the white sauce. Baked uncovered, it forms a hot, bubbly casserole with a rich, creamy texture and mild garlic flavor. Cooling after baking helps it to set for slicing.

The presence of spinach adds a mild bitterness and freshness, contrasting with the cheesy, creamy layers. This recipe uses cooked chicken, which keeps the meat tender and moist within each serving. As a white lasagna, it omits tomato sauce, focusing instead on a cheesy garlic-flavored white sauce.

Serving this lasagna with a light salad complements the richness and rounds out the meal. It is well suited to family dinners or gatherings where a comforting baked dish is appreciated.

Leftover or rotisserie chicken is recommended for convenience and flavor. The recipe advises allowing the lasagna to cool before cutting to help it hold its shape.
