Eclair Cake
Description
The Eclair Cake creates a creamy vanilla and chocolate layered dessert without baking. Vanilla pudding is combined with milk and Cool Whip to form a light, creamy filling. Layers of graham cracker squares are alternated with the pudding filling in a baking dish, creating a simple assembly process.
Once layered, the cake is chilled briefly before spreading softened chocolate frosting on top. The dessert is then refrigerated overnight to let the graham crackers absorb moisture from the pudding and soften, resulting in a texture reminiscent of an éclair pastry's creamy layers but with the ease of a refrigerator cake.
The chocolate frosting adds a smooth, sweet topping contrast to the vanilla pudding and soft crackers. This dessert is easy to prepare ahead and is suitable for serving chilled as a sweet, creamy treat.
Serving it the next day improves the texture by allowing the flavors to meld and the crackers to soften fully.
Ingredients
- 2 pkgs instant vanilla pudding mix 3.5 ounces each
- 8 ounces Cool Whip thawed
- 3 cups milk
- 30 graham crackers broken into square
- 16 ounces chocolate frosting
Instructions
- In a mixing bowl, stir together the pudding mix, milk and Cool Whip.
- Arrange a single layer of graham cracker squares on the bottom of a 9X13 baking dish. You can break up the crackers to cover the bottom of the dish if needed.
- Spread half of the pudding mixture on top of the crackers.
- Top with a layer of graham crackers over the pudding mixture.
- Pour the other half of the pudding mixture on top of crackers.
- Top with a final layer of graham crackers.
- Cover with plastic wrap and refrigerate for 30-60 minutes to allow the pudding to set.
- Microwave chocolate frosting in the microwave for about 15 seconds to soften it. Make sure to remove the lid and foil seal. Stir the frosting and make sure that it's easy to spread.
- Remove plastic wrap from the baking dish and evenly spread the chocolate frosting on top.
- Cover with plastic wrap and refrigerate over night to allow the graham crackers time to soften.
- Then the cake is ready to slice, serve and enjoy!
Notes
- For best texture, chill the cake covered overnight before serving to let the graham crackers soften properly.
- The cake keeps well covered in the refrigerator for 2 to 3 days.
