Description
The Éclair Cake layers crisp honey-flavored graham crackers with a creamy filling made from instant French vanilla pudding, milk, and whipped topping. This filling is beaten until thick and spread evenly over the crackers, which absorb moisture during refrigeration. Multiple layers create a soft texture that contrasts with the initial cracker crunch.
The top layer is finished with smooth chocolate frosting that can be warmed briefly to improve spreadability, forming a rich, sweet topping reminiscent of éclair chocolate glaze. After at least four hours in the refrigerator, the cake softens into a custard-like dessert with a harmonious blend of vanilla and chocolate flavors.
This dessert is straightforward to prepare and ideal for parties or potlucks requiring minimal active time. Honey graham crackers complement the sweetness but any graham cracker variant can be used based on preference. Vanilla pudding can be substituted for French vanilla if desired.
Ingredients
- 1 box graham crackers around 14 ounces
- 2 boxes vanilla pudding mix 3.4 ounces each, instant French
- 8 ounces Cool Whip thawed
- 3 cups milk
- 16 ounces chocolate frosting
Instructions
- In a large bowl, mix together the pudding mix, Cool Whip, and milk. Beat well with a wire whisk until thick and creamy.
- Arrange graham crackers in a single layer in the bottom of a 9x13 baking dish.
- Spread half of the pudding mixture over the graham crackers.
- Add another layer of graham crackers and spread remaining pudding over the top.

- Refrigerate for at least four hours before serving. The longer this sets, the softer the graham crackers will get. We like this best around the 4 hour mark, but it's still delicious the next day.
Notes
- To soften frosting for easier spreading, remove foil and microwave briefly until slightly runny.
- Honey graham crackers are preferred for flavor, but other flavors work if preferred.
- Ensure enough graham crackers to create three layers in a 9x13-inch dish.
- Instant pudding mix is necessary; regular cooked pudding will change texture.
