Egg Noodles Recipe

Egg Noodles are a simple homemade pasta made from eggs, flour, water, and salt. The dough is mixed and kneaded until elastic, then rested before being rolled thin and cut into strips of desired width. These noodles can be boiled quickly and served as a fresh pasta base for a variety of dishes, offering tender texture and mild flavor.

Description

This Egg Noodles recipe calls for large eggs, all-purpose flour, water, and salt. After combining flour and salt, a well is made into which the eggs and water are added and lightly scrambled together. The mixture is worked into a tacky dough on a floured surface, kneaded until smooth and elastic, and rested covered to relax the gluten.

Once rested, the dough is divided and rolled out paper-thin on a floured surface, then cut into strips using a sharp knife or pizza cutter. The strips are dusted with flour to keep them from sticking together. Cooking is done by boiling the noodles briefly until tender. These fresh noodles provide a versatile base suitable for soups, sauces, or stir-fries.

Ingredients

Servings
  • 3 egg large
  • 2 ½ cups all-purpose flour plain flour, divided, plus additional for rolling
  • 1 Tablespoon water
  • 1 teaspoon salt

Instructions

  1. Combine 2 cups (250g) flour and salt and whisk together. Make a well in the center of the flour mixture and add your eggs and water.
  2. Lightly scramble eggs with a fork and then use a fork to work all ingredients together until completely combined.
  3. Add additional flour as needed (you may need even more than indicated in the ingredients above) until dough forms a tacky (but not too sticky) ball.
  4. Transfer to a lightly floured surface and knead until smooth and elastic (about 5-10 minutes). Return to bowl, cover with plastic wrap, and allow to rest for 20 minutes.
  5. Once dough has rested, divide into 4 pieces. Take one piece (re-cover the remaining pieces), place on a lightly floured surface, and roll into a paper thin sheet with a lightly floured rolling pin.
  6. Use a sharp knife or pizza cutter to cut into strips of desired width and length. Collect strips and dust with a bit more flour to keep from sticking together. Set aside and repeat with remaining dough.
  7. To cook, bring a large pot of heavily salted water to a boil. Add noodles to boiling water and cook until tender (how long this will take will depend on how thick or thin your noodles are, it can take anywhere from 5-15 minutes).
  8. Serve with desired toppings (I like to use butter, pepper, and parmesan).
