Egg Salad with Greek Yogurt

Ingredients

  • 6 to 8 egg peeled, hard boiled
  • cup yogurt plain, Greek
  • 1 to 2 tablespoon onion red, finely chopped
  • 2 teaspoons Dijon mustard
  • ½ to 1 teaspoon kosher salt
  • black pepper to taste
  • ¼ teaspoon paprika and extra for garnish, sweet
  • chives for garnish, chopped

Instructions

  1. Chop the hard boiled eggs and add to a bowl.
  2. Add the Greek yogurt, red onion, Dijon mustard, salt and pepper, paprika, and chives.
  3. Combine well and garnish with a little extra paprika and chives if desired.
