Ingredients

  • 4 large eggs
  • salt to taste
  • black pepper to taste
  • 1 tablespoon vegetable oil divided
  • 1 small onion thinly sliced
  • 1/2 large bell pepper sliced
  • 3 garlic cloves minced
  • 1 tablespoon light soy sauce
  • 1 green onion chopped (plus more for garnish)

Instructions

  1. Crack eggs into a bowl. Add a pinch of salt and pepper, then beat until combined.
  2. Heat 1/2 tablespoon of oil in a large skillet over medium-high heat. Add beaten eggs and stir until softly scrambled.
  3. Remove the eggs from the pan and set them aside. In the same skillet, add the remaining oil and sauté the onion, bell pepper, and garlic for about 2-3 minutes until just softened.
  4. Return the eggs to the skillet and drizzle the light soy sauce over the mixture. Stir-fry everything together for another 1-2 minutes until well combined.
  5. Incorporate green onion, season with salt and pepper to taste, and serve right away, garnished with more green onions.
