Eggnog Cookies

Eggnog Cookies combine butter, sugars, eggs, and eggnog with spices like nutmeg, creating soft cookies with seasonal flavors. They include holiday sprinkles for a festive touch and are baked until golden with edges slightly browned. The accompanying eggnog frosting blends butter, powdered sugar, and eggnog to top the cooled cookies, enhancing the eggnog taste and adding creamy sweetness.

Description

Eggnog Cookies are made by creaming together butter and two types of sugar for a fluffy dough base. Eggs, eggnog, and vanilla add moisture and a distinct holiday flavor, while nutmeg and baking soda balance the richness and provide leavening. The addition of holiday sprinkles gives a colorful festive look. The dough tends to spread during baking, so spacing is important. They bake at 350°F until the edges gain a gentle golden hue, resulting in cookies with a tender center and slightly crisp edges.

Once cooled, the cookies are topped with a frosting made from butter, eggnog, powdered sugar, and a pinch of salt, creating a smooth, sweet, and creamy finish that complements the nutmeg spiced cookies. These cookies are appropriate for seasonal gatherings or as a holiday treat.

Tips include spacing cookies well on baking sheets to allow for spreading and using a greased tablespoon measuring spoon for easier dough portioning. Cookie size can be adjusted, with larger cookies requiring longer bake times.

Ingredients

Servings

For the cookies

  • 3/4 cup butter softened, unsalted
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 egg
  • 2/3 cup eggnog
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 3 cups all-purpose flour
  • 1/2 cup holiday sprinkles

For the frosting

  • 1/2 cup butter softened, unsalted
  • 1/4 cup eggnog
  • 1/8 teaspoon salt
  • 3 cups powdered sugar

Instructions

  1. Preheat the oven to 350 degrees F. Line two baking sheets with non stick baking mats or parchment paper.
  2. Place the butter, granulated sugar and brown sugar in the bowl of a mixer. Beat for 2-3 minutes or until light and fluffy.
  3. Add the eggs, eggnog and vanilla extract to the bowl. Beat for 1-2 minutes or until well combined.
  4. Add the salt, baking soda, nutmeg and flour to the bowl. Mix on low speed until just blended.
  5. Spoon tablespoon sized dollops of the dough 2 inches apart on the prepared pans. You may need to repeat this process if you have more dough left over.
  6. Bake the cookies, one pan at a time, for 10-13 minutes or until golden brown around the edges. Repeat with remaining pan of cookies.
  7. Let the cookies cool on the pan for 5 minutes, then transfer to a rack until completely cool.
  8. For the frosting, place the butter in the bowl of a mixer and beat until light and fluffy. Add the eggnog and beat until smooth.
  9. Add the powdered sugar and salt, then beat on low speed until frosting is smooth and fluffy. You can add more eggnog, one teaspoon at a time, to reach your desired consistency if needed.
  10. Spread a layer of frosting onto each cookie, then top with sprinkles and serve.

Notes

  • Leave ample space between cookies on the baking sheet to accommodate spreading.
  • Spray a tablespoon measure with cooking spray to prevent dough from sticking while portioning.
  • Adjust baking time according to cookie size; bigger cookies will require more time.
