Elote

Elote is grilled or boiled corn on the cob coated in a mixture of mayonnaise and sour cream, then spiced with chili powder, cayenne, and salt, topped with crumbled cotija cheese and finished with a squeeze of lime. This Mexican street food offers creamy, tangy, spicy, and salty flavors married to the sweetness and crispness of fresh corn, creating a flavorful and textured side dish.

Description

This Elote recipe starts with boiling fresh corn ears for 8 to 10 minutes until tender. After drying, each ear is coated evenly with a creamy spread combining mayonnaise and sour cream. A seasoning mix of chili powder, cayenne pepper, and kosher salt is sprinkled over the coated corn, providing a spicy kick balanced by the creamy base. Cotija cheese is then crumbled on top, adding a salty, crumbly texture contrast. A lime wedge is squeezed over the assembled ears before serving to introduce bright acidity.

Elote is commonly enjoyed as a snack or side dish, especially during summer when fresh corn is abundant. Its layers of creaminess, spice, and tang pair well with various grilled or Mexican-inspired entrees.
