Description
Embutido is a Filipino-style ground pork meatloaf known for its rolled shape and flavorful filling. In this recipe, ground pork is combined with diced vegetables including carrot, onion, and green bell pepper, along with pickle relish and raisins to add a subtle sweetness and texture contrast. The mixture is tied together with eggs, flour, and breadcrumbs to maintain structure and moisture.
The meat mixture is spread onto foil, layered with Vienna sausages and quartered hard-boiled eggs, then rolled tightly into a log and steamed for about an hour. Steaming cooks the meat gently, preserving moisture and producing a tender texture with the savory and sweet filling encased within.
Once cooked, the embutido can be sliced and served warm or at room temperature. It pairs well with steamed rice or as a component in larger Filipino meals and celebrations.
The recipe yields two large logs which can be cut into smaller portions if desired, allowing flexibility for serving sizes or leftovers.
Ingredients
- 1 pound ground pork
- 2 pieces egg raw
- ¼ cup flour
- 1 cup breadcrumbs or 3 pieces sliced bread cut into really small pieces
- 1 big carrot - diced (small)
- 1 big onion - diced (small)
- 1 medium green bell pepper - diced (small)
- ⅓ cup pickle relish sweet
- 3 tablespoons tomato sauce or ketchup
- ⅔ cup raisins
- 1-2 teaspoons salt
- ¼ teaspoons black pepper
- 6 pieces vienna sausage or 3 hotdogs
- 2 egg each cut into 4, hard-boiled
Instructions
- Put all ingredients, except the last 2, in a large bowl.
- Mix everything together using your hand to make sure that all is well incorporated. Set aside.
- Cut 2 pieces of aluminum foil about 12 inches long each. Take half of the meat mixture and flatten it on of the foil, covering about a half. Don't forget to leave some space at the ends, about 2 inches each side.
- Place the sausages and hard boiled eggs on the middle of the flattened meat.
- Roll the foil so that the meat forms a cylinder or log, locking the sausage and egg in the center. Twist the ends of the foil to lock.
- Steam for 50-60 minutes.
Notes
- This recipe produces two large embutido logs or four smaller ones depending on how you slice them.
- Ensure the ends of the foil are tightly twisted to keep the filling secure during steaming.
- Slice embutido after it has cooled slightly to maintain clean slices.
