Description

This preparation involves cleaning and bundling the thin enoki mushrooms into small groups of around ten strands. Each bundle is wrapped snugly with bacon slices cut in half and held in place with toothpicks to prevent unraveling during cooking. The bacon is then cooked in a little neutral oil in a pan to crisp the outside while gently warming the mushrooms inside.

A sauce is mixed combining chili pepper flakes for heat, light soy sauce and oyster sauce for umami and saltiness, water to balance intensity, and cumin powder for earthiness. This sauce can be served alongside the cooked bundles as a dipping liquid or brushed on afterward for extra flavor.

  • 200 g enoki mushroom , tough ends removed
  • Bacon contains 5 slices, cut into halves, package
  • Toothpicks as needed
  • 1/2 tablespoon neutral cooking oil generic cooking oil

Sauce

  • 2 tbsp. chili pepper flakes
  • 2 tbsp. soy sauce light
  • 1/2 tbsp. oyster sauce
  • 1 tbsp. water
  • 1 tbsp. cumin powder

Instructions

  1. Divide the enoki mushrooms after cleaning into small bundles of ten. Cut your bacon into two equal halves. You only need just enough bacon to wrap around the small bundles of enoki mushrooms.
  2. Put each bacon piece flat and open on a clean board. Place a bunch of your enoki mushrooms at one end of the bacon. The mushrooms do not have to have equal ends.
  3. Wrap the bacon around the clean bunch of enoki mushrooms tightly. Ensuring the bacon is wrapped closer to the base of the enoki mushrooms.
  4. To ensure the bacon stays in place, use a clean toothpick or a bamboo skewer to hold it in place. Use the toothpick or skewer like you would an office pin.
  5. Repeat the wrapping process with the remaining strips of bacon and the enoki mushrooms, until you have several bundles. You should have about ten bundles of bacon-wrapped enoki mushrooms.
  6. Next, you get a clean bowl to mix your dressing. Add your chili flakes, cumin, light soy sauce, oyster sauce, or any other alternatives mentioned earlier. Add water and mix thoroughly.
  7. Next, you brush on the dressing on the bacon-wrapped part of the enoki mushrooms.You can brush on oil or butter on a clean frying pan. As an alternative, you may fry without additional oil or butter as the bacon will secrete its own oil. The frying pan should be on medium heat, place the yummy bundles into the pan and fry on all sides for between 7-8 minutes over the middle fire. Sprinkle some chopped green onion and serve hot.

Notes

  • Oven roasting is a good alternative to pan-frying for a less hands-on approach and even cooking.
  • Each bacon-wrapped bundle constitutes one serving portion, based on nutritional analysis.
  • Remove tough ends of enoki mushrooms before bundling to improve texture.
