Description
The preparation begins by combining Mexican crema or sour cream with mayonnaise, lime juice, and garlic salt to form a tangy and creamy sauce. Frozen or fresh corn is boiled until tender, then drained and sautéed in a skillet with salted butter until some kernels take on a light char, adding smoky notes.
The warm corn is combined with the creamy sauce in the pan, making the seasoning cling to each kernel. Serving involves sprinkling crumbly cotija cheese, chili powder for a mild heat, and fresh cilantro over the top, accompanied by lime wedges to brighten the dish further.
Esquites can be prepared using fresh corn cut from cobs or frozen corn. The creamy sauce can be made in advance and combined just before serving. Leftovers can be refrigerated in an airtight container for 3-4 days and reheated in a skillet or microwave.
Ingredients
- ⅓ cup Mexican crema or sour cream
- ¼ cup mayonnaise
- 2 teaspoons lime juice
- garlic salt to taste, with parsley flakes
- 2 (12-ounce) bags corn frozen
- 2 tablespoons butter salted
- ½ cup cotija cheese
- chili powder to taste
- cilantro for garnish
- 1 lime cut into wedges, for garnish
Instructions
- In a small bowl, combine crema, mayonnaise, lime juice and garlic salt. Set aside.
- Bring a medium pot of water to a boil, then add corn and cover. Bring back to a simmer and cook for about 4-5 minutes or until corn is cooked through.
- Drain water and transfer corn to a pan over high heat. Cook until a few pieces are a little charred, about 5 minutes., then add butter and crema mixture and cook until heated through.
- Divide among serving cups or in a serving bowl and top with cotijja, chili powder, and cilantro. Serve warm with lime wedges on the side.
Notes
- Use fresh corn cut from the cob when possible, or thaw frozen corn before cooking.
- The creamy sauce can be prepared ahead and refrigerated; combine with warm corn before serving.
- Leftovers store well in an airtight container in the fridge for 3-4 days and reheat on stovetop or microwave.
