Et Sote Recipe - Beef Saute In Tomatoes

Often described as a Turkish stir fry, this et sote recipe is versatile and can be served with a number of complimentary side dishes.

For The Et Sote

  • 250 grams beef cubed lean
  • 2 medium tomato 1 chopped & 1 grated
  • 2 green pepper deseeded & roughly chopped
  • 1 onion (peeled & roughly chopped)
  • 1 fresh chilli (finely chopped (optional))
  • 1 dessert spoonful tomato puree
  • 20 grams butter
  • 1 teaspoon oregano
  • 1 handful parsley (finely chopped (to garnish))
  • salt to taste
  • black pepper to taste

For The Bread

  • 100 grams bread
  • 20 grams butter
  • 1 teaspoon chili flakes

Instructions

For The Et Sote

  1. Add your meat & butter to a frying pan and cook on a medium heat.
  2. Once the juices have reduced, add your onion & pepper (and chilli, if using).
  3. Stir around until your onion & pepper have softened a little.
  4. Now add your grated tomato & simmer for a few minutes to allow your beef to cook through.
  5. Add your chopped tomato, oregano & seasoning and stir.
  6. After a couple of minutes, add your salça (tomato paste) and around 100 millilitres of water.
  7. Stir until your salça has dissolved and simmer until your beef has completely softened.
  8. Add more water if your sauce thickens too much.
  9. Remove from the heat.

For The Bread

  1. Roughly cut your bread into bite-sized chunks.
  2. Heat the butter & chilli flakes in a pan & add the bread.
  3. Stir around until the bread starts to crisp & toast (around 2 minutes).
  4. Arrange the bread around the edges of two large bowls and add your et sote to the centre.
  5. Sprinkle with the parsley and serve.

Notes

  • As well as beef, sote dishes can also be made with lamb, chicken or vegetables.
  • Other accompaniments can be rice or bulgur wheat pilaf.
