Extra-Crispy Pear Lavender Crisp

A sublime seasonal dessert featuring an extra crispy topping and just a hint of lavender. Recipe adapted from 'The Messy Baker' by Charmian Christie.

Ingredients

  • 2/3 cup raw cane sugar divided
  • 7 cups pear ripe, chopped, Bartlett variety
  • 1/2 teaspoon salt divided, sea salt
  • 1/4 teaspoon lavender dried flowers
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups panko bread crumbs
  • 1/2 cup pecans or hazelnuts, chopped
  • 1/3 cup butter melted

Instructions

  1. Preheat the oven to 350F.
  2. Place the pears in a medium bowl and toss 1/3 cup sugar over them. Grind 1/4 teaspoon salt and lavender together in a mortar and pestle or spice grinder until fine. Sprinkle over pears along with the cinnamon.
  3. Mix pears with sugar and spices; transfer to a 8x8 or 9' round baking dish.
  4. In a medium bowl, mix together the panko, 1/3 cup cane sugar, 1/4 teaspoon salt and pecans. Pour over the butter and mix to combine.
  5. Sprinkle the topping over the pears; place in the oven on the lower rack.
  6. Bake for 50-60 minutes, or until the pears in the centre are soft when pierced with a fork. Tent loosely with foil if the topping is browning too quickly.
  7. Remove from oven

Notes

  • If the pears are still slightly green and hard (as mine were) you can still make the crisp. You may have to bake it for 10-15 minutes longer than the suggested time, that is all.
