Fantasy Fudge
Description
Fantasy Fudge combines granulated sugar, butter, and evaporated milk, boiled to a rolling boil and maintained for four minutes to reach the correct consistency. Afterward, semi-sweet chocolate and marshmallow creme are stirred in until melted and fully integrated, producing a smooth, silky chocolate mixture. Vanilla extract enhances the flavor, while chopped walnuts may be added to introduce texture and nutty notes.
The mixture is poured into a buttered, foil-lined 9x13" pan to cool and set. Once firm, it can be sliced into squares for serving. This fudge has a satisfying dense yet creamy texture owing to the marshmallow creme's inclusion.
For storage, this fudge can be wrapped tightly or stored in an airtight container at room temperature for up to a week, refrigerated for up to three weeks, or frozen for up to one month. Thaw frozen fudge in the refrigerator before serving to maintain texture and freshness.
Ingredients
- 3 cups granulated sugar
- ¾ cup butter unsalted
- ⅔ cup evaporated milk
- 1 pound semi-sweet chocolate
- 7 oz. marshmallow creme in jar
- 1 teaspoon vanilla extract
- 1 cup walnuts optional, chopped
Instructions
- Prepare your ingredients. Make sure the chocolate is chopped if using a large block, or have the chocolate together. Chop the nuts if you are using them. Take the marshmallow creme out of the jar and place it in a bowl.
- Prepare the 9x13" baking pan. Line the pan with foil and butter the inside.
- Using a large 3 quart saucepan that has a thick bottom, bring the milk, sugar, and butter together to a rolling boil over medium heat. Make sure you are stirring constantly once it starts to boil and bubble.
- Once it starts to boil, start a timer for 4 minutes. If you are using a candy thermometer, you want to remove the fudge mixture when it reaches 234°F.
- Once the 4 minute timer goes off or the mixture reaches the temperature, add the marshmallow creme and chocolate.
- Let the chocolate and marshmallow melt and then mix together well. Add the vanilla and if you are adding walnuts, stir them in now.
- Pour the mixture into the prepared pan and let it cool before slicing.
- Let it set for 4 hours. Place it in the refrigerator to make it more firm.
Notes
- Wrap fudge in plastic or store airtight at room temperature up to one week or refrigerated up to three weeks.
- Frozen fudge can be stored in a freezer bag for up to one month and should be thawed in the refrigerator.
- Chopping chocolate and nuts beforehand helps ensure even mixing and texture.
