This produces a smooth, creamy fudge with a classic chocolate flavor and a tender, melt-in-the-mouth texture. The fudge is cooled until firm, then cut into bite-sized cubes, perfect for sharing or gifting.

Description

The Fantasy Fudge uses granulated sugar, butter, and evaporated milk boiled together to a firm ball stage at 234°F, ensuring the correct crystallization for smooth fudge texture. Constant stirring prevents scorching during boiling. After removing from heat, vanilla extract, chocolate chips, and marshmallow creme are incorporated while the mixture is still hot, melting everything into a uniform, creamy blend. Adding nuts is optional at this stage.

Once combined evenly, the fudge is poured into a prepared pan lined with parchment paper, allowing easy lifting once set. It cools completely at room temperature—about three hours—until firm enough to cut into uniform 1-inch cubes with an offset spatula for even spreading. The final product has a silky mouthfeel with classic chocolate and sweet marshmallow flavors.

This fudge is suitable as a homemade treat for holidays, parties, or casual snacking, and it can be stored wrapped in an airtight container to maintain freshness.

Ingredients

  • 3 cups granulated sugar
  • cups butter (about 1 ⅓ sticks)
  • cups evaporated milk (5 oz can)
  • 1 tsp vanilla extract
  • 7 oz marshmallow creme
  • 12 oz chocolate chips semi-sweet

Instructions

  1. Spray a 9-inch square pan with baking spray and line with parchment paper, so that there is overhang on both sides (for easy lifting). The baking spray is optional, but helps the paper stick better.
  2. In a large saucepan over medium high heat, bring butter, sugar and evaporated milk to a boil while stirring constantly to prevent scorching. 
  3. Continue to stir constantly and boil for 5-10 minutes until until candy thermometer reaches 234° F. It will be boiling hard and violently. Remove from heat.
  4. Stir in vanilla extract, chocolate chips and marshmallow creme until well combined and melted. At this point you could also add in nuts if desired (like walnuts or pecans).
  5. Pour into prepared pan, using an offset spatula to spread out evenly. 
  6. Cool completely at room temperature, about 3 hours.
  7. Lift fudge from pan and cut into 1-inch cubes.
