Feta Bruschetta with Balsamic Glaze

Feta Bruschetta with Balsamic Glaze is the perfect starter to your family dinner or get together. Super quick, and easy. More importantly–crazy delicious. It’s just one of those really simple dishes that everyone loves. It is fresh, hearty and not to mention, versatile.

Ingredients

Servings
  • 1 ciabatta baguette or baguette or choice, large
  • ¾ cup feta cheese (crumbled)
  • 1 garlic clove
  • balsamic glaze (store bought or homemade see below notes)

Bruschetta Mix

  • 4 tomato seeded and diced, medium
  • 1 tablespoon basil (fresh)
  • 1 tablespoon parsley (fresh)
  • 1 garlic finely minced, clove
  • salt (to taste)
  • black pepper (to taste)
  • 1 tablespoon olive oil (optional, for a lower calorie option omit the oil)

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, mix together the diced tomatoes, basil, parsley, garlic, salt, pepper and olive oil. Set aside.
  3. To create crostinis, slice the baquette on an angle approximately 1 inch thick.
  4. Place each slice on a baking sheet and lightly drizzle both sides with olive oil and place in the oven until crispy and light golden brown.
  5. Remove from oven and gently rub one side of each piece of bread with a garlic clove.
  6. Spoon the Bruschetta mixture onto each slice of bread and place on serving dish.
  7. Sprinkle each piece with crumbled Feta cheese.
  8. Drizzle the balsamic glaze over each piece.
  9. Enjoy!

  • Balsamic Glaze Ingredients1 cup Balsamic Vinegar1 tablespoon granulated sugar or brown sugar
  • How much sugar do you need to make balsamic glaze?I usually use 1 cup balsamic vinegar to 1 tablespoon sugar ratio. Some recipes call for much more sugar, but I think it gets too sweet after a couple tablespoon of sugar. I recommend starting with a low amount of sugar as you can always make it sweeter at the end.
  • How to make Balsamic GlazeBring balsamic vinegar and sugar to boil in a pot.Reduce to simmer for 20 mins, or until a syrupy texture.
