Ingredients
Chicken Cutlets
- 4 chicken breast (boneless skinless, pounded)
- ½ cup flour (all purpose)
- ½ cup Italian seasoned breadcrumbs
- 1 egg (beaten)
- salt

Feta Tomato Sauce
- 1.5 cups cherry tomato rinsed
- 1 cup feta cheese (brick (not sliced or crumbled))
- 3 garlic peeled and crushed, cloves
- ½ teaspoon chili flakes
- ¼ teaspoon oregano dried
- 2 tbsp olive oil
- 1 teaspoon parsley (finely chopped, optional)
Garnish
- feta cheese optional, crumbled
- parsley optional, finely chopped
- chili flakes (optional)
Instructions
- Preheat Air Fryer or Oven to 350°F.
Chicken Cutlets
- Season pounded chicken breast with salt and pepper.
- Set up a dredging station with 3 small bowls. Add flour to one bowl, beaten egg to another, and the breadcrumbs to the third bowl.
- First, coat chicken in flour and shake of excess. Then dip in egg, shake off excess. Coat in breadcrumbs.
- AIR FYRER COOKING METHODSpray both sides of chicken with cooking spray and add to Air Fryer tray/basket. Place in Air Fryer and cook for 20 minutes or until golden brown and cooked through.OVEN COOKING METHODSpray both sides of chicken with cooking spray and add to a baking sheet (optional place chicken on a wire rack on top of the baking sheet to keep the bottom crispy while cooking. If placed directly on the baking sheet the bottom will steam). Add to oven and cook for 20-25 minutes or until golden brown and cooked through.
Feta Tomato Sauce
- AIR FRYER COOKING METHODAdd all feta tomato sauce ingredients to an Air Fryer safe baking dish. Place in Air Fryer and cook for 20 minutes or until cheese starts to melt and tomatoes pop open.OVEN COOKING METHODAdd all feta tomato sauce ingredients to an oven safe baking dish. Place in the oven and cook for 20-25 minutes or until cheese starts to melt and tomatoes pop open.
- Remove from Air Fryer or Oven and use a fork to gently mash the tomatoes, garlic cloves and feta cheese.
- Add in fresh chopped parsley (optional) and stir to combine.
Serving
- Pour feta tomato sauce over chicken cutlets and garnish with additional crumbled feta, chopped parsley and chili flakes.
