Fiesta Chicken

Fiesta Chicken combines tender slow-cooked chicken breasts with black beans, corn, and salsa, enriched by cream cheese for a creamy texture. The dish is cooked in a crock pot, which allows the flavors to meld gently over several hours. The resulting shredded chicken mixture is ideal for serving over rice or wrapped in warm flour tortillas, making it a versatile and filling meal option.

Description

Fiesta Chicken is a slow cooker recipe featuring boneless chicken breasts cooked with black beans, corn, salsa, and optional taco seasoning. The chicken cooks thoroughly over 4 to 5 hours on low heat and is shredded before being combined again with the creamy softened cream cheese. This step adds a smooth consistency and subtle tang to the hearty mixture. The blend of ingredients provides a balanced bite between the savory chicken, sweet corn, and hearty beans enhanced by the tomato-rich salsa.

The dish can be served in a variety of ways such as over steamed rice or nestled inside warm flour tortillas for a casual meal. It is a practical recipe for preparing ahead and letting the slow cooker do much of the work, while the cream cheese finishing touch creates a rich, comforting texture. The optional taco seasoning adds extra depth but can be omitted for a milder flavor profile.

Using frozen chicken breasts is acceptable and convenient here, as the long cooking time in the slow cooker ensures thorough cooking and shredding ease. Stirring in the cream cheese and letting it sit before mixing in helps it melt down evenly into the dish.

Ingredients

Servings
  • 4 chicken breast around 1.5 lbs, boneless skinless, frozen or thawed
  • 1 (15 1/2 ounce can) black beans drained and rinsed
  • 1 (15 ounce can) corn drained
  • 1 (15 ounce) salsa jar of your favorite
  • 2 tablespoons taco seasoning (optional)
  • 1 (8 ounce) cream cheese package, softened

Instructions

  1. Take 4 frozen, yes, frozen (or thawed), boneless chicken breasts put into crock pot. Add the black beans, corn, salsa, and taco seasoning if using. Keep in crock pot on low for about 4-5 hours or until chicken is cooked. Once it is cooked, take it out and shred it. Return shredded chicken to the crockpot.
  2. Add the cream cheese (just throw it on top!) and let sit for about 1/2 hour. It may look at little strange at this point. Don't worry. Stir in the cream cheese.
  3. Serve over rice or in warm flour tortillas.

Notes

  • Frozen chicken breasts can be used directly in the crock pot; ensure they cook thoroughly before shredding.
  • Let the cream cheese sit on the hot chicken mixture for about 30 minutes before stirring to allow it to melt completely.
  • Serve the Fiesta Chicken over rice or in warm flour tortillas for versatile meal options.
  • Taco seasoning is optional and can be adjusted or omitted to suit taste preferences.
