  • 3/4 cup corn I used Trader Joe's Fire Roasted frozen Corn, heated, cooked
  • 1 tomato diced, large
  • 1 scallion diced fine, large
  • 2-4 tbsp cilantro to your liking, chopped
  • 1 tbsp lime fresh squeezed juice
  • salt to taste

Instructions

  1. In a large bowl, combine hot rice, heated corn, heated beans, tomato, scallion, cilantro, lime juice and salt if needed.
  2. Toss and serve.
