Ingredients
- 1 1/2 cups long grain rice cooked
- 3/4 cup black beans rinsed and heated, canned
- 3/4 cup corn I used Trader Joe's Fire Roasted frozen Corn, heated, cooked
- 1 tomato diced, large
- 1 scallion diced fine, large
- 2-4 tbsp cilantro to your liking, chopped
- 1 tbsp lime fresh squeezed juice
- salt to taste
Instructions
- In a large bowl, combine hot rice, heated corn, heated beans, tomato, scallion, cilantro, lime juice and salt if needed.
- Toss and serve.
